Sourdough loaf

And another – it weighs about a pound. This one rose like a demon, and has the best oven spring I’ve ever managed. I slashed it really deeply, not sure if that made the difference…

I’m starting to think that giving it less time on the second prove helps it rise more in the oven. Less prove seems to stop it getting wet and sloppy, so it keeps its structural integrity and rises upwards not out.

Lovely big airholes as well – I’ve added an interior pic to make a change!
