Especially when it’s made with panettone. And especially especially when you got them dead cheap a couple of days after Christmas….
Two panettone, sliced thickly and buttered.
6 eggs, 4 egg yolks (yes, 10 eggs!).
800ml double cream.
800ml Jersey milk.
6 tbsp Cointreau.
100g flaked almonds.
Put bread in dish. Sprinkle almonds under and in between, but not on top. Heat milk and cream, and then carefully whisk into eggs. Whisk in sugar, booze. Pour on top of bread. Soak for 30 minutes. Poke it about a bit to make sure all the bread is wet. Bake at 180 for 30 minutes, add rest of almonds for another 15.
I made it a few days ago and it re-heated really nicely, it actually puffed up even more than the first time. 8 adults got through about a third of it, so it could probably feed 16-20 at a push…
Now, what to do with the growing collection of egg whites in the freezer? I currently have 10 stashed away…. A massive pavlova?! Almond macaroons? Given we got an ice cream machine for Christmas, I think the egg white overload will continue for some time. Creative ideas welcome!
